So, I have no leftover turkey, but I have a ton of stuffing. My family needs a bigger bird next year. Outside of feeding the kids bowls of stuffing for the next week, I found a killer recipe that makes your leftover stuffing into…. WAFFLES! The recipe is simple…Take 4 cups of stuffing, mix it with some chicken stock to make it moist, and then add 2 eggs. Adjust your ingredients, as necessary.
The waffles take a bit longer to cook, make sure they are nice and crisp on all sides before removing them, or they will break.
There are a ton of things you can do with them, I was thinking of serving them with soft boiled eggs on top. That runny yolk dripping down into the crispy stuffing. Wow!
You can also serve them with leftover turkey on top, ham, or any other meat.
Enjoy and let me know how they turn out for you….And now I’m getting hungry 😉
